Grandma’s Oatmeal Cookies |

Cream together: 1 cup (2 sticks) organic butter (warmed to room temp) 1 cup raw sugar (preferably the fine ground) 1 tsp real vanilla 2 eggs (or equivalent substitution)
Add and stir: 1 ¾ cup spelt flour ½ tsp real salt (Celtic or red also good) ½ tsp baking soda
When mixed well add: 3 ½ cups steel cut organic oats ½ tsp cinnamon 1 cup ground nuts of choice (walnuts are good) ½ cup raisins (optional)
Bake on un-greased cookie sheet about 12 minutes at 375 on a top oven rack or 350 on a lower rack. Remove from oven when center is still soft and edges are browned. Cool on wire racks. Makes about 4 dozen average size cookies.
